CHAMPAGNE EMMA

It got its name after the sister of great-grandfather Emilio. It is a champagne made of Rebula which is ideal for making champagne because of its freshness. It is made by classical technique – secondary fermentation is provided in a bottle. According to classification it belongs to brut nature category – less than 3 g/l reducing sugar.

VINEYARDS:  Brajda, Čotovo, Početrka
AGE OF VINEYARDS:  from 8  to 50 years

VINIFICATION

Before full ripeness organically produced grapes are harvested by hand. After pressing wine is held in inox vessels where spontaneous fermentation (with own yeasts) starts. Wine ripens for a year. Then it is bottled and after second fermentation it ripens for another three years in bottles.

WINE DESCRIPTION

Colour of  straw with slight green shades. We can smell fresh, fruity bread crust. In our mouth it is lively, fresh and drinkable.
