EMILIO

Emilio is cuveé of white varieties Sauvignonasse, Rebula in Pinot Gris. It got its name after the great-grandfather who was the pioneer of winemaking in Štekar House. 80% of cuveé presents Sauvignonasse (or furlanski tokaj). It arrived from Northern Italy. It is very sophisticated and elegant wine, of full and intensive taste.

VINEYARDS:  Pročno, Španc, Brajda, Čotovo, Početrtka
AGE OF VINEYARDS:  from 8 to 50 years

VINIFICATION

At full ripeness organically produced grapes are harvested by hand, then sent through a vertical destalker. Maceration 24 hours without yeast added and without temperature control. After pressing wine is held in inox vessels where it is kept for a few hours in order to calm down. Then it is transported into used 225 l barrique barrels where spontaneous fermentation (with own yeasts) starts.

RIPENING

Wine ripens in barrique barrels for approximately 8 to 10 months. Then it is decanted and filled in bottles without filtration. Bottling is carried out without additional sulphur.

WINE DESCRIPTION

Wine is yellow colour with golden shades. At first we can smell dry flowers and almonds a bit later. Its taste is intensive, full and extremely mineral.
