CABERNET SAUVIGNON

It is one of most known and popular varieties of red wines. Its roots are in Bordeaux, but today it is not used alone but Merlot is added to it. We can smell blackberries in young wine whereas a bit later wine gets precious smell of dry plums and jams.

VINIFICATION

At full ripeness organically produced grapes are harvested by hand, then sent through a vertical destalker. Maceration (20 to 25 days) without yeast added and without temperature control. After pressing wine is held in inox vessels where it is kept for a few hours in order to calm down. Then it is transported into used 500 l oak barrels where spontaneous fermentation (with own yeasts) starts.

RIPENING

Wine ripens in oak barrels for approximately 12 to 14 months. Then it is decanted and filled in bottles without filtration. Bottling is carried out without additional sulphur.

WINE DESCRIPTION

Wine is ruby-red colour with soft purple shades. We can smell soft fruit, herbs and plum jam. Tannins are elegant, soft. Fresheness gives wine drinkability.
